It takes practice. You can't really control what you throw on a table but you can increase your odds.

There is supposed to be a method of throwing the dice, you practice keeping your arm at the same angle at the end of the throw and you have to hit the back wall once to prevent weird rolls. The idea is to control every thing the dice do from the time you pick them up until the time they land. I saw it the other night on the Discovery Channel

^^ yeah i think i saw that show too! the guy learned how to roll from some engineering student, after a while he got so good he went out to start his own two man crew.
